Cotton Candy Ice Cream

INGREDIENTS

2 cups heavy cream

1 cup whole milk

½ cup granulated sugar, divided

Pinch of salt

3 egg yolks

2 teaspoons (2 dram bottles) cotton candy flavor

4 packages cotton candy flavored Pop Rocks

Gather the ingredients for ice cream.

In a medium saucepan, set over medium-low heat. Whisk together the heavy cream, milk, half of the sugar and salt. Bring mixture just to a boil.

While the cream/milk mixture is heating, combine the yolks and remaining sugar in a medium bowl.

Using a hand mixer on low speed or whisk, beat until mixture is pale and thick.

Once the cream/milk mixture has come to a slight boil, whisk about a third of the hot mixture into the yolk/sugar mixture.

Add another third of the mixture, then return the combined mixture to a saucepan.

Add the cotton candy flavoring.

Using a wooden spoon, stir the mixture constantly over low heat until it thickens slightly and coats the back of the spoon. The mixture must NOT boil, or the yolks will overcook. The process should only take a few minutes.

Bring the mixture to room temperature. Cover and refrigerate 2 hours, or overnight.

Transfer the mixture to an ice cream maker and freeze following the manufacturer's insturctions.

After the ice cream stiffens (about 2 minutes before it is done), add Pop Rocks. Some of the Pop Rocks will pop out of the ice cream maker so wear eye protection.

Continue freezing until the ice cream is ready.

The ice cream will have a soft, creamy texture. Transfer the ice cream to an airtight container and place it in the freezer until ready to serve.
